Sweet and salty cashew butter apple nachos

Forget the  stringy melted cheese, coolness of the sour cream, zingy spice of jalapeños and the crunch of toasted tortilla chips (Don’t panic- it’s just for a moment!) because we have a new take on nachos that is perfect fuel for revision breaks plus it is guilt free!

This recipe takes less than 10 minutes to make, involves no cooking or baking and only a little bit of microwave action so it’s perfect for exam season. If you resist eating them in one sitting place them in the fridge and they will keep for up to 4 days ready to be taken out whenever a late night library session is needed.

 

You’ll need:

Rolled oats

Green or red apples

Peanut of cashew butter (we used cashew butter as its slightly sweeter)

Peanuts (salted works better)

Optional:

Dark chocolate for melting

Blueberries (or any other fruit or toppings you fancy. Dried fruits, desiccated coconut and other types of nut also work really well.)

 

Method:

  1. Chop up your apples and arrange them on your tray

2.Melt the nut butter for 1 to 2 minutes in the microwave and drizzle over your apples

3.Whilst your butter is in the microwave, begin to crush your peanuts with a rolling pin and keep to one side

4.Coat generously in the oats and crushed nuts

5.Add your chocolate and other toppings and you’re good to go!
